Casein

Casein is the main protein in cow milk. Its tiny clumps, along with drops of fat, scatter light, so milk looks white.

Fun fact

Most of the protein in cheese is casein. But even hard cheddar is only about a quarter protein (22.87 g in every 100 g). The rest is mostly water (36.75 g) and fat (33.31 g).
